Vaguely Asian Peanut Tofu Pasta
4 oz Trader Joe's spinach linguine
3 oz frozen mixed vegetables
24 cubic inches tofu
3 tsp Asian Gourmet™ Thai Peanut Sauce
In a medium saucepan, bring 2 cups water to a boil and add the vegetables and pasta. Meanwhile, slice the tofu into bite-sized tofu-units and fry these in a frying pan with a reasonable amount of vegetable oil. When you feel that the pasta and vegetables are fully cooked to your satisfaction, strain with a colander and add them to the tofu. Lower the heat and stir in peanut sauce. Serve in a bowl or dish. This is a fun and healthy meal which does not compromise on flavor, due to the spiciness of the Asian Gourmet™ Thai Peanut Sauce, as well as its high sodium and saturated fat levels.
